Beloved sushi chef remembered for bringing a taste of Tokyo to Halifax

A tragic loss hit Halifax’s food scene last week as the legendary Chef Shigeru Fukuyama, affectionately known as Chef Shige, passed away. Alongside his wife and business partner, Aya Otara, Chef Shige owned and operated Sushi Shige since 2002, bringing authentic Japanese cuisine to the North End of Halifax at a time when Japanese restaurants were scarce in the area.
Chef Shige’s culinary journey began in Tokyo, where he trained as a sushi chef and became a member of the prestigious Japan Sushi Association, Sancho-kai. He had the privilege of working with renowned sushi chef Jiro Ono, famous for his appearance in the documentary “Jiro Dreams of Sushi.” After living in Toronto from 1993 to 1999, Chef Shige and Otara decided to make Halifax their permanent home, drawn to the kindness and peacefulness of the community.
Over the course of more than two decades, Chef Shige and Otara built strong relationships with their customers, who appreciated the authentic Japanese culinary experience Sushi Shige offered. Otara fondly remembers Chef Shige’s joy in seeing customers enjoy their food and express their gratitude. Despite the heartbreaking loss, Sushi Shige has reopened its doors, a testament to Chef Shige’s dedication to his craft.
Otara is determined to honor Chef Shige’s legacy by continuing to serve the community he loved. She believes his spirit watches over the restaurant, guiding them as they navigate this difficult time. With tears in her eyes, Otara expresses her commitment to preserving Chef Shige’s memory and ensuring that Sushi Shige remains a place where customers can enjoy his culinary creations.
As Halifax mourns the loss of a culinary icon, Sushi Shige stands as a testament to Chef Shige’s passion for food and dedication to his craft. His legacy lives on in the hearts of those who knew him, and his spirit continues to inspire all who walk through the doors of Sushi Shige.
