Vancouver's Botanist grows into its own through Mexican-inspired fine dining and electric cocktails

Botanist at Fairmont Pacific Rim has become a staple in Vancouver’s food and beverage scene, thanks to the creative minds of executive chef Hector Laguna and bar director Grant Sceney. Since its inception, the restaurant has garnered numerous accolades, including being named one of Canada’s 100 Best and making the World’s 50 Best Discovery list. The bar, under Sceney’s leadership, ranked No. 26 on a prestigious list of North America’s 50 Best Bars in 2025.

Laguna, who has been with Botanist since its inception, infuses his dishes with flavours from his native Mexico, creating a unique and memorable dining experience. He sources ingredients locally, including specialty herbs grown for him in Chilliwack, to bring a taste of Mexico to Vancouver.

Sceney’s creative cocktails have also helped put Botanist on the map. From elaborate experiential beverages to a thoughtfully curated regular menu, the bar has become a destination in its own right. Guests are encouraged to arrive early to enjoy one of the cocktail services before their meal, adding an extra layer of excitement to their dining experience.

In addition to its regular offerings, Botanist is launching its first Winemakers Dinner Series this month, featuring guest winemakers from South Australia and the Louis Roederer Champagne House. These evenings will showcase a five-course paired menu created by Laguna and his team in collaboration with the featured winery.
